Hamilton’s Grill Room, the outstanding BYOB in Lambertville, sits right next to a quaint canal, but its shady courtyard offers no view. No one minds, because the focus is on the stellar raw ingredients that executive chef Mark Miller employs: giant shrimp served with anchovy butter, and thick hunks of tuna topped with mango chutney. Inside, diners relax in one of four dining rooms: the Delaware Room, adorned with floor-to-ceiling pastoral murals; the Grill Room, with modern Mediterranean decor; the Bishop Room, named for its eclectic collection of religious symbols; and the Gallery, with a nude mural.
