Restaurateur Dan Butler — the energetic owner of Wilmington's Toscana and Deep Blue — has remade the 200-plus-year-old Chadds Ford Inn into the contemporary Brandywine Prime, with prime-grade steaks and seafood as its niche. All the country inn/Continental clichés dishes have been swept out the door: mushrooms stuffed with crabmeat are out; mushroom napoleon, with grilled portobellos, pillowy marscapone, peppery arugula and crisp phyllo squares, dressed with rosemary vinaigrette, is in. The kitchen wisely serves up cuts of meat that aren't ridiculously oversize, and the wine program is even more sensible, generally holding the bottle to double retail, instead of the triple or more we routinely see.
