When Cinnaminson native Alicia Danielle Polak founded the Khaya Cookie Company in 2006, the former investment banker knew she wanted to start a baking business that would create jobs for the inhabitants of a poor South African township. But she didn’t know how to bake. Just two years — and thousands of test batches of cookies — later, Khaya employs more than 500 people at its South African production facility and exports 16,000 boxes of tender and buttery orange-rooibos shortbread cookies and date-and-apricot-studded granola “krunchis” every month to gourmet stores from San Francisco to Philly.
