Eat This Now: Ice-Cream Sandwiches

Let’s pause to thank the humble Chipwich. That super-frozen convenience-store staple — dense chocolate chip cookies and thick vanilla ice cream rolled in chocolate chips — was the unlikely inspiration for these artisanal ice-cream sandwiches from Buster’s Treats. Painstakingly made by Phoenixville amateur bakers Jessica “Buster” Daher and Marisa McLaughlin, these organic (“We’re definitely not into low-fat; organic is our healthy,” Daher says) treats layer lush, fresh-churned ­Philadelphia-style ice creams — tangy strawberry, subtle ginger, dead-on apple pie — with soft, homey cookies in Mom-made-it flavors like peanut butter, oatmeal, and, of course, chocolate chip. Daher’s favorite is the tender vanilla cookie piled with rich lemon mascarpone ice cream, the muse for which she found at the Cheesecake Factory.

These sandwiches are the best!! I love the gourmet flavors - Strawberry Cheesecake, Apple Pie, Orange Sherbert, Lemon Mascarpone, etc, etc are to die for!
