Vegetarian diners sometimes forget that they don’t need a whole menu dedicated to meatless fare to find something satisfying. The Latest Dish’s seitan meatloaf is made just like Mom’s, only with savory seitan standing in for the beef. And of course it’s served over a huge pile of creamy mashed potatoes and slathered with plenty of (mushroom) gravy. For veggie comfort food, it doesn’t get much better than this.
