Blue Sage proves that expensive kobe beef isn’t the key to Philly’s new favorite sandwich, the slider. (Besides, who could top Barclay Prime at its own beefy game?) At this Bucks County veg spot, meaty hunks of grilled eggplant and zucchini are topped with crisp baby arugula leaves, sprinkled with a salty Maytag blue cheese, and sandwiched in a miniature sesame brioche roll generously coated with the house-made chipotle mayo. All that and the accompanying mound of cooked-to-order yucca fries will satisfy even the staunchest carnivore.
