With the same care that he applies to his pulled pork and ribs, owner Chris Forlano smokes three-pound tuna loins rubbed with cracked black pepper and brown sugar over hickory wood, then combines the flavorful fish with homemade mayonnaise. Best. Tuna. Ever.
