Whipped Bakeshop’s Zoë Lukas

For the past five years, Fishtown’s Whipped Bakeshop has been turning out buttery cupcakes, cookies, cakes and other sweet treats that we wouldn’t be surprised to hear you have scarfed down yourself, popular as the shop has grown in its few years on the scene. Owner Zoë Lukas has a degree in painting (which certainly explains why her cake designs are so gorg), but opened the shop in 2009 with her husband Brennen when she decided that her lifetime love of baking was the path she wanted to follow.

You’ll frequently see Lukas’s beautiful (and so good—trust us) work in the pages of PW, but we thought we’d check in with her to find out about a few of her favorite things.

Favorite cake/buttercream/filling flavor combo for the autumn season We make pumpkin spice cake starting in September, and I love it paired with either our old-fashioned vanilla buttercream (sweet, and made with just a touch of cream cheese) or our caramel Swiss meringue buttercream (a silky, buttery icing made with our house-made caramel).

Favorite dessert in the world Well, in terms of something baked, I love homemade pie (rhubarb and sour cherry are favorites) and strawberry shortcakes made with warm drop biscuits and in-season berries and fresh whipped cream. I also really love candy (Starburst, Skittles, SweetTarts are some faves) and chocolate (Hershey’s milk chocolate bars and Peanut Five Star Bars from Lake Champlain Chocolates) … And also KandyKakes. Can you tell I have a sweet tooth?

Favorite non-baking arena to find inspiration Inspiration is easy to find while looking at art, design and fashion, but if you’re looking, you can see it just about anywhere. I love pattern, texture and color, and I like the challenge of incorporating those elements in unique ways in our cake and cookie designs.

Favorite thing to bake in your free time at home I like to bake pies, tarts, galettes and simpler cookies at home. I have also been really into canning and preserving lately. My husband and I just picked about 35 lbs. of apples and I made applesauce and apple butter with them over the weekend. My family can expect homemade gifts this year!

Favorite part of working with a couple on designing their wedding cake Every couple is different, and I really enjoy helping each one come up with a unique cake that reflects their style. And of course, tastings are always a great time—many people tell us that it is the best part of planning their wedding!
