Order: The Cape May oysters (a fat-free plate with refreshing lemon juice and pickled local honeydew) or the free-range chicken (prepared sous vide chef-talk for vacuum packing and slow cooking with just a tiny bit of oil, and served with Kennett Square mushrooms, squash from Jersey and PA farms, and baby greens from Branch Creek Farm).
