Al Pastor: Opening in Exton

I was a big fan of Lansdale’s Stove & Tap when I reviewed it a couple months back. It’s a large, ambitious space in the ‘burbs, run by two industry vets, serving food that’s better than what most people expect to find outside the city.

And now, owners (and Starr alums) Justin Weathers and Joseph Monnich are expanding in a big way. They’ve got two new restaurants scheduled to open next month, both of them in the Eagleview Town Center in Exton. We haven’t got a lot of information yet, but here’s what we know…

Weathers and Monnich are opening an Italian concept and a Mexican one, both in the Eagleview Town Center expansion area–which is being built up as a “restaurant row” for the neighborhood. Al Pastor (pictured above in a rendering) will present Mexican cuisine with “a fresh, modern approach,” featuring traditional classics with up-to-date twists. Bella Vista (pictured below) will offer a trattoria-style menu, highlighting rustic presentations and flavors. Both spaces will be casual, approachable and family-friendly–a sweet spot that the team hit perfectly with Stove & Tap.

They’re hiring right now for both locations, and word is that they’re aiming to get both new restaurants open in November. Here’s hoping they can pull it off.
