Sidecar and Foobooz Collaborate on Wings


This week, as part of Sidecar’s monthly Cock-a-doodle-doo chicken wing special, yours truly has collaborated with Sidecar’s Brian Lofink to create the Foobooz Philadelphia chicken wings. Like me, these wings are fiercely local and crazy about beer (Man, that sounds a little too much like something Guy Fieri would say).

The wings get their start in a Yards Brawler wort brine. They are then coated in a thin coating of rice flour and fried. The wings sit on a hot sauce based on Victory Brewing’s Punch Drunk Ghost Pepper Sauce which has been cut a bit with apple cider vinegar and some other flavors devised by the clever Brian. The wings are accompanied by a chunky blue cheese sauce featuring Goot Esse Farm blue cheese. The wings are topped with a totally local Greensgrow carrot and celery root salad.

The wings are on special this week and tonight, I’ll be on hand after 6 p.m. So come on by and have some wings. I’ll even buy you a beer.
