Summer Menu at M Restaurant

The list for summer menus just keeps getting bigger. And now we can add M Restaurant at the Morris Hotel. Chef Kyle Beebe has put together a menu featuring local produce from Jansal Valley Farms and Blue Moon Acres. In addition to the full menu, which is available every night, M is also offering a $45 four-course prix fixe option.

First Course:
Wahoo: Cucumber, Fried Culantro, Puffed Wild Rice, Lime Creme Fraiche Sorbet
Blue Moon Acres Farm Greens: Watermelon Radish, Tomato, Shallot, Feta, Creamy Dill
Hamachi Ceviche: Yuzu, Sesame, Salsa Verde, Corn Bread
Charred Corn Soup: Fried Sage, Feta, Pickled Red Onion, Bacon
Exotic Mushrooms: Porcini, Oyster, Maitake, Soubise

Second Course:
Sockeye Salmon: Patty Pan Squash, Zucchini Blossom
Mozzarella Balloon: Confit Heirloom Tomatoes, English Pea Espuma, Toasted Peanuts
Shrimp Noodle: Scallion, Ginger, Pickled Fennel, Bacon Dashi
Vegetable Pasta-less: Fava Beans, Red Pearl Onion, Black-Eyed Peas
Seared Scallop: Rosti, Saffron Powder, Spicy Mustard Cream

Third Course:
