Citypaper is reporting (and Eater is confirming) that Yun Fuentes is out at Rosa Blanca. Already.

Yeah, the place has only been open about a month. And yeah, it seemed like Fuentes was doing good work there. And double-yeah, he’s been with the Garces organization for a long time. But it looks like he’s out of the kitchen (and the Garces Group entirely) and ex Tinto sous chef Jose Olmeda is now standing in his place.

    This place was a disaster. The food was garbage, and it looks like the cheapest restaurant in town. Garces was asleep at the wheel on this one…

    I am pretty uniformly a Garces hater.

    His places almost uniformly feature ludicrously overpriced simple small plates prepared and plated hastily by line cooks. His places (even the purportedly high-end ones like Amada) are overcrowded and too loud with rude staff that act like they are doing you a favor as they toss out food in no particular order. He charges $10-15 for a small glass of cheap spanish wine ($12 for an albarino are you serious?!). What he did conning the state into putting a PLCB shop INSIDE his “market” and then turning it into an overpriced restaurant that sells booze and charges corkage is unfathomable.

    All that said, I liked Rosa Blanca. It was one of the better values and although the food was simple cuban style food it was better than most and fairly priced. Even the booze wasn’t as ridiculous. So here’s hoping it stays that way. Then there will be at least one of his restaurants that I can recommend when someone comes to town insisting on eating at the “iron chef’s”.
