New Chef Means a New Menu at Jose Pistola’s

Casey Parker and Joe Gunn’s Jose Pistola’s has been a great place for beer since it opened. But the food has definitely had its ups and downs. But with hiring of Adán Trinidad, food will be one more reason to head to the Center City bar. Trinidad has most recently working and creating menus for Richard Sandoval Restaurants. He is known to Philadelphians for his time as chef de cuisine at Fish and his stint at Stephen Starr’s El Vez.

Trinidad has just rolled out a new menu which is much much more aggressive than some of its past efforts. The Mexican menu features multiple types of guacamole and salsa plus some exciting ceviche, queso fundido and sopes. Of special note is the Random section of the menu which includes mole meatballs and carnitas steamed buns.

GUACAMOLE

Traditional     avacado, tomato, red onion, cilantro, lime

Spicy Tuna     sambal, scallion, sesame seeds

Huitlacoche     maitake mushroom, epazote, tomato, red onion

Pomegranate Mango     tomato, red onion, cialntro, sweet balsamic

SALSA

Pico de Gallo     tomato, red onion, cilantro, lime

Sikil Pak     pepitas, roasted tomato, habanero, lime

Salsa Borracha     pasilla chiles, orange, garlic, oinion, tequila

Queso Parker     cheddar, Monterrey, Chihuahua, chipoltle peppers

SOUP & SALAD

Tortilla Soup     pasilla chicken broth, pulled chicken, avacado, crema, queso fesco

Baby Head Lettuce Salad     tomato, red onion, corn, baby heads, cucumber, avacado, sherry honey vinaigrette

Caesar Salad     Believe it or not the Caesar salad originated in Mexico by some Italian guy. Ours has romain, cotija cheese, and smoky anchovie vinaigrette

CEVICHE

Made by drowning fish in acid or something like that.

Tuna     lemon grass, coconut, red onion, cilantro, orange

Shrimp     tomato, avacado, habanero, cilantro, onion

QUESO FUNDIDO

Translates to Little Cheese Fun

Chorizo     sala, borracha

Mushroom     maitake, epazote

Spicy Pork     pineapple, kimchi, cilantro

Short Rib     chipotle, onion, cilantro

Grouper     spicy mayo, pickled cabbage

BURRITOS

Mexican Cheese blend, crema, tomato, refried pinto beans, cilantro, pickled jalepeno and onion

Carnitas Steamed Buns     Guacamole, chipotle aioli, pickeld jalepenos

    Given the events of this week, I think it’s tasteless to mention the name “Gunn.” Can’t he call himself Joey Potatoes for a while?

    Stopped in Friday and was quite unimpressed. The nachos were always awesome here. I noticed they no longer have the half-order option. We got the full order and they came out on a small ceramic plate — not the nice large wooden plank we were used to. We added the spicy pork, but were hard-pressed to actually find much of it included. I really hope this was an off night and not indicative of the new chef.

    Is anyone else alarmed that this business was able to make such a change to their menu (and the nachos!) without consulting the apartment and condo dwellers nearby??

    I used to love the food at Pistolas. This place at one time had the absolute best nachos, grouper taco and burritos in the city. I was there on saturday afternoon and everything we had was well below par. Soggy nachos with bland and tough pork, cold burritos, flavorless fish tacos and a limp, cheeseless quesadillas. Quite a bummer to see.

    Unfortunately, I have to agree. The new menu looks interesting–the draught list is hilarious–and I may still give a few of the new items a go. However, “Nachos at Jose’s” had been a frequent driver to visit, and after this weekend I am not all too certain that is going to continue.

    Spicy pork was tasty but tough. Even resorted to a knife at one point. Chips were fresh but perhaps a bit tough. Decent overall, mind you, but not that breathtaking value the nachos used to have. Lack of the old sizing options and nacho-boat presentation is indeed a minus, though a livable one, I suppose. Lack of the delicious picked onions, though…
