One of the top-tier jewels in Philly. The pork belly is my favorite rendition in the city. http://www.foodistfiles.com/2012/09/an-affection-for-fond.html

When did basic inexpensive items like skate-shortrib-octopus-pork belly become 26 to 29 dollar dishes?

  • Little Timmy

Octopus cheap? 5-10$ a pound with shitty yield? Skate? Sure it’s 2$ a pound whole but it needs to be fileted. Ever cleaned 25 pounds of whole skate? . Fileted is 8$ a pound plus waste. And price goes up with popularity of things like pork belly and short rib. Especially the high quality stuff.

Soooooo….. I hope you aren’t running a kitchen anywhere because your food cost would be fucked. These prices look pretty accurate.

I heard chili’s does 3 courses for 15$ if you are looking for a deal

    @ Little Timmy
Even with Octopus yield, a paella (which is mostly rice) with bits of octopus and and mussels (which cost nothing) at $29 is an absolute ripoff unless it feeds 2 people.

29 freaking dollars. Are you insane.
Cleaned Skate is $5/lb at Samuels and Sons.

Pork belly is $1.89/ lb on the average to max $3

    Shush. You don’t know anything

It’s a tiny BYO so they can’t do a lot of covers and they don’t have the margins of alcohol to pad the bottom line. Obviously the preparation of food by a skilled chef, service, atmosphere, etc have a cost but the main driver is that the place is fully booked so if cheapskates like you don’t want to go, they aren’t losing a sale. Supply and demand.

@anon can you please tell me where you are getting your pricing on food? Unfortunately, I don’t have a flux capacitor and have no other means of traveling to 1950 to get the prices you speak of. Pork belly $3 max per lb?? misinformed try $15 boneless and rind off. Whats your AOL screen name?

  • sailing

$15 per lb is of course 2025 pricing
