Sweet Corn is in Season at Isabella


Chef Michael Cappon of Isabella has just released a menu featuring sweet summer corn that has just come in season. Offered through July, the menu features highlights like a Chilled Corn Bisque and Scallops with creamed corn. All items on the menu use Isabella’s usual Mediterranean twist.

Isabella’s Corn Menu

Chilled Corn Bisque 7
with marcona almond crème fraiche
Maiz de la Parilla 7
grilled sweet corn with a toasted chili and saffron crema
Arroz Con Maiz 8
bomba rice slow cooked with sweet corn, fresh cream and wild mushrooms
Scallops 11
seared scallops, creamed corn and charred frisée 
Puerco 9
crispy pork cheeks, cream polenta and a sweet corn relish 
Seitan 16
crispy marinated fresh seitan, with a sweet corn and toasted orzo salad, and a balsamic reduction

    I believe sweet summer corn has indeed just come into season…in Georgia. Gotta love the local initiative.

    • Local sweet corn was for sale at the Headhouse Square Farmers’ market last Sunday.

    I doubt there is enough local sweet corn right now to supply restaurants but… so what? The menu doesn’t claim to be local and it is an abundant, seasonal ingredient.

    Bogans: Yes, there is corn shipping from GA and elsewhere, but it’s also become available locally too. I’ve already had PA and NJ corn this year. Who knows how much Isabella is buying locally, but it’s available. See you at the farmers market.
