Still, if anyone’s up to the challenge, it’s Laura Grove. A cheese-eating vegan who trained under Metropolitan’s James Barrett, she opened the back-room bakery in Queen Village’s natural foods market in 1991. Her greatest achievements: crispy toffee cookies, berry cobblers, organic fruit muffins, chocolate birthday cakes, earthy pumpkin pies, and something called a Mikerific—banana sponge cake topped with peanut butter and iced with dark, dairy-free ganache. Look out, Kandy Kake. The vegans are coming.
