Five-Course, Four-Chef D’Artagnan Charity Dinner At Le Cheri

D’Artagnan, the meat and charcuterie purveyor to many of the best restaurants around the country, is celebrating its 30th anniversary with a charity dinner party at Le Cheri. Yes, tickets are expensive. But we’re talking five courses with paired wines being prepared by some of the best chefs in the city, in celebration of one of the top purveyors in the business.

And the menu? It looks kind of amazing.

The five course course dinner will be held on Monday, Apr. 20 at 6:30 pm. The event is being co-hosted by Ariane Daguin (of D’Artagnan) and Chef Pierre Calmels (Chef/Owner of Le Cheri), with each course prepared by a different esteemed chef and paired with a wine by David Bowler.

The dinner will be preceded by a reception with its own menu of pheasant consommé, poached quail egg with caviar, grilled lamb lollipop, foie gras torchon, and Mangalitsa ham. In case there wasn’t enough foie gras for you at the reception, though, the first course will also feature foie gras–with pear, chorizo and dates, prepared by Calmels himself. The wine served during both the reception and the first course will be Cremant de Limoux.

The second course, prepared by Greg Vernick (chef/owner of Vernick Food and Drink), will be a king oyster mushroom carpaccio with braised morels and pickled chanterelles. It will be paired with a Cotes de Gascogne Domaine de Mirail Blanc (and if that name means anything to you, you’re definitely more wine-cultured than I am). The next course will be prepared by Lee Styer (chef/owner of Fond), and will be a squab breast and leg confit served with white asparagus and ramps. The wine pairing will be Cotes du Rhone Eric Texier. The fourth course will be by Konstantinos Pitsillides (chef/owner of Kanella Restaurant) doing lamb neck filet, grilled lamb ribs and yogurt paired with a Cahors La Bete Noire. The dessert course will be chocolate with duck bacon, paired with a ruby port.
