Steve “Tex” Peyton, born-and-raised Texan, has sworn off charcoal, propane and lighter fluids: “I’m a purist. I start fire with a paper box.” Which is why people follow him and his smokers from Limerick to Phoenixville to Royersford—there just aren’t many places to get authentic brisket, chicken and chopped beef this richly smoky, this tender. Even the saucy pulled pork (“not the way Texans eat smoked meat,” he harrumphs) is the tastiest around. Check the website for his schedule.
