You can thank a grandma for the fluffy chocolate chip cheesecake here: Chef Michael Hawthorne borrowed the recipe from his, who years ago sold the light-as-air cakes out of a Cherry Hill bakery. Grandma Jeanne’s still known to throw on an apron and whip up a few when Mike’s restaurant takes on too many orders.
