It was way back in 2002 that Davio’s David Boyle, on a whim, rolled up the heart of the Philly classic and dunked it into a deep fryer. His recipe—chopped steak, provolone, parm and Philadelphia cream cheese tucked inside a lightly fried, paper-thin crust—is so good, it’s trademarked.
