Not just because Jonathan McDonald is young (29) and adorable. Not just because he acquired his edge at trendsetting restaurants in Spain and Manhattan. Not just because he finally added some standard-size entrées to his small-plates repertoire at boutique-petite Rittenhouse Square hot spot SnackBar, where the noshing continues until after midnight. We love Jonny Mac for all those reasons, but most of all, we love his passion for oddball ingredients, and the persuasive, mostly on-the-mark combinations he constructs from them. Who knew that pork belly brined in white beer, served with kumquat, rhubarb, cucumber and pickled honeydew melon, could taste so good?
