Best of Philly 2004 Japanese

While Sagami is rightfully heralded for some of the region's best sushi — pristine, without showy multi-ingredient maki to overshadow the fish — it is sometimes sensible to turn one's attention away from chef-owner Shigeru Fukuyoshi's sushi bar. The kitchen in the back quietly turns out superb cooked dishes that, unlike Sagami's high-concept Cinnaminson analog, Fuji, keep it simple: eggplant baked with a sauce of miso and ground chicken, saute acute edenoki mushrooms and egg floating atop a bowl of broth.
