This is where the Blue Angel landed. When Stephen Starr closed his French bistro, chef Olivier de Saint Martin (formerly of Dock Street Brasserie) bought the restaurant's elegant banquettes and marble tables and installed them in the Caribou Café. The renovation, and Saint Martin's tres French comfort food, has revitalized the Walnut Street spot. Under the Paris-red awning, you?ll find tomatoes Provençal, skate with capers and brown butter, and, at dinner, the city's best steak frites: Saint Martin isn't afraid to use white wine, veal stock and butter to sauce his hanger steak.
