Though much of the menu is portioned for size-two women who shop at Knit Wit, the $15 Rouge burger is built for XXL appetites — and that hasn't changed in Neil Stein's lean times. It's 10 ounces of 80/20 ground sirloin, seared in a cast-iron pan and oven-finished, topped with Plugra-sautéed onions and gruyère. No wonder they sell momre than 600 every week.
