Alain Passard, the Paris-based Michelin three-star chef, took his acclaimed Arpège almost exclusively vegetarian last year, leaving only one fish and one meat dish on his menu. Was he crazy? No, he was just out to prove that superb, flavorful meals can be produced with, well, just vegetables. Blue Sage, in a Southampton strip center, while not quite a three-star, certainly excels. With such tasty dishes as porcini and thyme risotto in marsala ancho chile broth, or black bean cakes with macadamia nuts and grilled pineapple, chef Michael Jackson shows that meat isn't always necessary
