What delights us at the end of a meal is the cheese plate, which owner Aimee Olexy personally selects and introduces with a connoisseurs delight. She loves offering a trio of cheeses, thematically linked, that show off the qualities of a particular farm. The goat-cheese trio from Highfield Dairy, a small artisan producer in western Pennsylvania, is a recent feature, spruced up with a small strawberry-mint salad and thyme honey.
