Best of Philly 2007: Food Classes

Necessity spawned the Tria Fermentation School: Tria’s staffers had outgrown the training space in the restaurant basement, where they sipped the bar’s often unfamiliar wines and beers from plastic cups — and customers were constantly asking to join the fun. The school’s well-appointed classroom in Center City’s Medical Arts Building is now used for server training and a busy schedule of three or more informative — and appetizing — classes a week (and for private group classes). Sizeable portions, a knowledgeable staff, and a lineup of winemakers, brewmasters and cheesemongers make these the most satisfying food classes we’ve taken.
