Who wants to spend an hour making dinner after spending 10 hours at work? Not this gal, that’s for sure. If I have to choose between a really great meal that takes me over an hour to prepare or a plate of scrambled eggs and toast that takes 10 minutes to prepare, I’m going with the eggs and toast every single time — especially if it’s a weeknight. Who’s with me? I thought so.
