I’ve always had a complicated relationship with the summer weather. I love the summer heat on the weekend, when I am lying on a beach with a nice ocean breeze. But Monday through Friday, the heat is not my friend. Some days it is just too stinkin’ hot to slave away in a hot kitchen, and oh-so-easy to break out that tub of Rocky Road instead. Well, crank up that A/C and rest easy, because these no-bake desserts allow you to indulge—no oven, no guilt.
These cheesecake bars are a little higher in fat and calories than we'd like, but it is cheesecake after all. However, we'll argue that they make up for it by being high in protein, so even a small piece is satisfying.
