Unless you’re carbo-loading for a marathon, pasta is probably not on your list of healthy, go-to meals. Well, this week, that will all change, my friend. With these creative, healthy and—most importantly—insanely delicious twists on traditional pasta dishes, you can indulge in pasta every single night of the week without feeling a hint of guilt. No really, I swear!

Your cooking objective this week is to make these “pasta” dinners loaded with nutrient-packed favorites, like butternut squash, eggplant, and cauliflower. And here’s a bonus: Most of these recipes can be easily tweaked for vegetarians, vegans or gluten-free folks. So what are you waiting for? Get to cookin’ Be Wellers!
