For the past few weeks, I’ve been experimenting with healthy breakfast recipes that have garnered a few confused stares from my skeptical roommates. Quinoa for breakfast? That’s not a breakfast food, they said—until they tried it and absolutely loved it.

As a self-proclaimed breakfast connoisseur, I like to go beyond just eggs and toast, cereal and milk. I’m more the “avocado waffles” kind of girl. Or maybe banana splits with yogurt and jam.

Skeptical? I promise, you won’t be for long. When you’re not out grabbing a healthy breakfast at a local eatery, here are a few surprising and delicious dishes to try at home.
