José Pistola’s

The crappy old Copa Too on 15th Street, which closed recently, is about to become José Pistola’s, featuring beer and burritos. Owners Joe Gunn (hence the name) and Casey Parker, who worked together at Fergie’s for several years, promise over 100 bottled beers, hand pumped draughts, and “the biggest, best burrito people have ever had.”
It hasn’t been an easy renovation: “They hadn’t picked up a rag for about 5 years,” notes Parker. “It was the most disgusting, crazy shit I had ever seen. When I was underaged, Copa Too was the kind of place I wanted to get into. Then it went downhill. They started piling on all kinds of things to the menu. There were like a million margaritas. Well, we’re gonna have one margarita, and it’s gonna be fucking awesome.”
Parker anticipates being open by Labor Day, with prices coming in at around $7 for burritos, three tacos for $6, specials like soft shell crab tacos for $12. And in a nod to their former boss, there will certainly be Chimay on tap, but also $2 PBR bottles.
