Best of Philly 2007: Lemonade

Lemonade

It's the lime that makes this lemonade sing — just a squeeze of green to balance out the sunny concoction. Served casually in to-go cups at the Navy Yard's Urban Outfitters-hip cafeteria, Frog at the Yard, this take on the summer-day drink is heavy on the citrus and light on the sugar, making it healthier and brighter than most. A bonus: The tart edge of this thirst-quencher, like the acidity in many food-friendly wines, makes it a great mtach for the cafeteria's stir-fries and salads.  Yields 5 quarts.

12 lemons, juiced (about 3 cups)
3/4 c. granulated sugar
2 to 3 limes, juiced (about 1/4 c.)
4 1/4 quarts water, at room temperature

Combine all ingredients, mixing until sugar dissolves. Serve chilled.
