A Valentine’s Day menu that’ll sweeten up your sweetheart — and that you won’t regret in the morning

Truffle Mashed Potatoes
Serves 4

These light and creamy mashers sub olive oil, an unsaturated fat, for butter, a saturated fat, as well as whole milk or cream for 1 % milk—making it lighter on the waistline and more heart healthy. It’s also loaded with flavor and earthiness. The musky scent of truffles is said to sensitize the skin to touch, and the Greeks and the Romans considered them to be an aphrodisiac.

Ingredients
1 pound white potatoes, peeled, cut into cubes
1/2 cup 1 % milk
2 cloves of garlic
2 tbsp olive oil
1-2 tsp white truffle oil*
2 tablespoons parsley, chopped
Salt and pepper to taste

Directions
Cook potatoes in large pot of boiling salted water until very tender, about 20 minutes. While potatoes are cooking, add milk, olive oil and garlic to a small sauce pot. Simmer over medium heat for 5 minutes or so. You want the milk mixture to be hot but not boiling.

Remove the potatoes from heat, Drain them then return them to their cooking pot. Add milk mixture along with 1 tsp truffle oil. Mash until smooth. Season to taste with salt and pepper. Stir in parsley. If you want a stronger truffle flavor add the other tsp of oil. Mix and serve.

Roasted Asparagus
This glorious green veggie is an excellent source of fiber, potassium, folic acid, and vitamins A, C and K, to name a few. Because of its phallic shape, it’s frequently enjoyed as an aphrodisiac food—especially when you feed a piece to your lover.

Ingredients
1 1/2 pounds asparagus, tough ends trimmed, rinsed and patted dry
1 tablespoons extra-virgin olive oil
Salt and pepper to taste

Directions
Preheat the oven to 425 degrees F.
In a large glass baking dish, toss the asparagus with the olive oil and garlic. Season lightly with salt and pepper, and toss. Bake until the asparagus are tender and lightly browned, 10-15 minutes.
