Summer Food: The Tastes of Summer: Gin-and-Tonic

Old City’s Amada (217-219 Chestnut Street; 215-625-2450) has updated this summer classic to create the year’s most quenching summer cocktail. Named after an Almodovar film, “All About My Mother” is as cool as a cucumber.

3-inch section of cucumber, peeled, seeded and diced

½ oz. Monin rose syrup (if not available, replace with

simple syrup and add a splash of rose water, found
at most Indian and Middle Eastern markets)

½ oz. lime juice

1 ½ oz. Hendrick’s gin

Club soda

Muddle diced cucumber, rose syrup and lime juice in a large highball glass until completely softened. Top with ice and add gin. Blend by pouring back and forth into another container, finishing in the highball glass. Top with club soda, and garnish with a wheel of cucumber. Serves one.
